Spumante Trento DOC Metodo Classico
Sparkling wine from the mountains
Spumante Trento DOC classical mountain method is one of the most elegant of the wines typical to Trentino and the Dolomites - UNESCO Natural World Heritage Site - as well as one of the outstanding products of the Piana Rotaliana Königsberg. It is characterised by very fine bubbles and it flourishes under the skilful hands of the vine growers and winemakers who have been following and perfecting the well-established Classical Method for over a hundred years.
The origins of Trento and sparkling wine binomial date back to 1902, when a young wine technician, graduated from the Royal Agricultural School of San Michele all’Adige (now the Edmund Mach Foundation, still playing a prominent role in oenological research), with experience in Champagne vineyards and wineries, decided to return to Trento and put the secrets gleaned from the Frenchinto practice. His name was Giulio Ferrari and he wanted to create a sparkling wine that reflected the culture and history of his homeland, where people had been drinking wine on a daily basis for centuries.
Confirmation of its indisputable quality came in 1993 when Trentino sparkling wine was awarded TRENTO DOC certification, the first of its kind in Italy.
Today, Trento DOC Spumante Metodo Classico is the most popular sparkling wine in Italy.
The Classical Method
- Base wine: Spumante Trento DOC Metodo Classico is made mainly from Chardonnay grapes (although Pinot Nero, Pinot Bianco and Pinot Meunier are also used) according to the classical method of fermentation in the bottle.
- Tirage: after the first fermentation, selected sugars and yeasts are added to the base wine setting off the second fermentation to produce a natural sparkling wine.
- Remuage: the bottles are inverted and turned every day (riddling) so that the deposits from the fermentation collect in the neck of the bottle.
- Disgorgment: the yeast is then disgorged from the bottle, either mechanically (à la glace, that is, by freezing the neck of the bottle which pushes out the cap) or manually (à la volée, uncapping the bottle by hand). The bottle is then topped up with premium wine and sugars (liqueur d’expédition), each spumante producer having their own secret recipe.
